In Restaurant Tycoon 2, it's important to keep your customers happy by keeping your restaurant clean. To see how clean your restaurant currently is, you'll need to check the ratings board at the front of your restaurant. Cleanliness is found in the Eco Rating section:
To improve cleanliness, you'll need to ensure plates are washed after they've been used by customers.
How to Wash Dishes to Increase Cleanliness
To wash dishes, you'll need to install a dishwasher. You can do this by purchasing one in the build menu, and it looks like this:
Once purchased, you'll need to install it in your kitchen. Plates will then stack up on top of the dishwasher as customers enter and leave your restaurant, and will look like this:
Plates cannot be washed by workers, which means you'll need to manually load the dishwasher each time. To do this, walk over to the stack of plates to make the Clean Dishes box appear. You'll then need to hold down the E key to load the dishwasher:
This will clear the stack of plates above the dishwasher and improve your cleanliness rating. To keep your cleanliness rating high, you'll need to ensure the stack of plates needing washed stays as low as possible.
