In Sailor Piece, races give you varying passive bonuses ranging from plain stat boosts to additional effects, like lifesteal and extra XP gain. In order to upgrade from Human, which is the default race, you first need to have some Race Rerolls on hand.
To get a new race, all you have to do is open your inventory and use a Race Reroll. You can do this as many times as you desire. The only exceptions are Secret Races, which are tied to quests that have steep requirements.

Race Rerolls
Race Rerolls are items that you can get from varying sources, including shops, enemies, and even codes. Let's briefly go over each method:
Method #1. Farming Enemies
Pretty much every normal enemy in the game can drop a Race Reroll. Although this is an unreliable method of getting them early on, an endgame player can camp high level enemies with Conqueror Haki and stock up on rerolls (among other items) with very little effort.
Here are the drop rates for each normal enemy:

Bosses have varying rates for them, but it's usually one of their more common drops (if not guaranteed most of the time).
Method #2. Opening Chests
Chests of varying rarities can be dropped by all enemies in the game, whether they be bosses or mobs. Higher rarity ones, like Legendary and Mythical chests, have a higher chance of giving you Race Rerolls.
Rather than hoarding them, open all of the chests you receive as soon as you can if you're trying to get rerolls. Even if you don't get Race Rerolls, the cash and gems that you get from them can come in handy for the next method.
Method #3. Shops
No, not the Robux shop. If you go to Sailor Island, you'll find a lot of NPCs that offer items and other bonuses/rerolls for varying currencies. The plainly-named "Merchant" sells a set number of Race Rerolls, and you can buy out the whole stock as long as you have the money to do so.
His stock refreshes every 30 seconds. One very important thing to consider is that his prices will change every refresh, and items can cost either money or gems. It is highly recommended to only buy Race Rerolls with regular money, as the gems can be used for more useful things.

Secret Races
There are "Secret" races in the game that have varying prerequisites to unlock. These are extremely powerful, but they also require a ton of luck and effort.
Archangel
To unlock the secret Archangel race, you must first have the Angel race equipped. Once that condition is met, you can start the quest chain to get it.
First, go to the Blue Planet and speak with the Celestial Guide NPC just a few steps away from the portal:

Interacting with this NPC will start the following quest chain:

Once you've completed all of these, you can evolve into an Archangel by interacting with the Celestial Guide once more. Here are a few tips to help you with each trial:
Divine Trial 1
A quick way to get 5 Secret drops is through Secret Chests, which you can purchase from the Crystal Defense and Boss Rush shops. If you have the resources to buy them, purchase 5 chests to immediately finish this step. Trading with others works too.

Divine Trial 2
The hidden Angel Halos all have static spawn locations. You simply have to go there and pick them up. Just bear in mind that they can despawn and then reappear in the same spot every few minutes, so they might not always be there when you check.
Halo #1 - Blue Planet
For the first halo, head back to Blue Planet and head to the Celestial Guide. Past the hills behind the Celestial Guide, you'll find the first hidden Angel Halo on the edge of the island shown below:

Halo #2 - Punch Island
Next, head to Punch Island. The second halo can spawn on top of one of the buildings to the left immediately after leaving the portal:

Halo #3 - Starter Island Sea 2
In Sea 2's Starter Island, you will find the third halo's spawn point on the cliff immediately to your right after teleporting to the zone:

Halo #4 - Bizarre Island
Finally, the fourth halo can be found on Bizarre Island. Immediately after teleporting into the area, keep going to the right until you reach the cliffside. The halo can spawn on the cliff itself, shown here:

Divine Trial 3
There are 3 distinct halos that you need to find, and each of them are dropped by specific bosses in the game. There's not much to say about the fights themselves, but here is a list of the bosses that you can farm:

One thing to note is that these halos are not guaranteed to drop on kill. You will have to grind the respective bosses of each halo until you get all three.
Reaper
To unlock Reaper, you must first have the Wraith race equipped. Then, go to Slayer Island and speak with the Soul Harvester NPC in the left side of the village:

Interacting with this NPC will start the following quest chain:

Once you've finished all of the quests, you can evolve into a Reaper by interacting with the Soul Harvester once more. Here are a few tips to help you with each trial:
Soul Trial 1
The first Soul Trial is a purely grind-focused task and there is no shortcut for it. Find a spot where you can destroy two mob groups at once and start grinding. Blue Planet is a decent place to do this, as you can reach both mob groups here with the Quake fruit.
Soul Trial 2
There are 3 distinct souls that you'll need here, and each of them can be acquired from different bosses. Here's a handy list of souls and their associated bosses:

Soul Trial 3
This trial is straightforward. Explore the open seas until a Kraken spawns. These things have a ton of HP, so it is highly recommended to do this with other players.

Soul Trial 4
This one only requires you to win raids without dying. Pick the Easy difficulty to guarantee success. You'll need 10 Raid Keys total to do this, or you can ask for help from other players as well.
